Pillaton WI Report - January 2015

Cooking Demonstration

In gleeful anticipation of a good evening’s entertainment, 22 members of Pillaton WI braved heavy rain and a chilly wind to enjoy a cooking demo by Liz Llewellyn Jones, ably assisted by Trish Bobbin.

Liz outlined her background in catering and how as a small girl she would go into her father’s bakery and dip her finger into the raw cake mixes, starting a lifelong love of baking.

As someone who never bakes – all those dishes and not a proper meal at the end of it all! – I was prepared to be less than wowed, but Liz won me over with her excellent presentation on choux pastry.

I don’t have a sweet tooth, so she immediately grabbed my attention when she began with a demo of savoury choux puffs, just bite sized, and flavoured with pancetta and parmesan. With her Magimix, induction hob, piping bag and a wettened finger (to flatten out the “pointy” bits, as she explained!), Liz rustled up these little mouthfuls which Trish popped into the oven while Liz went on to demonstrate éclairs.

In true Blue Peter fashion, Liz had some she had prepared earlier, so this part of the demo focussed on making the crème patisserie to fill the éclairs, and the fondant icing to drizzle over their tops. Just a few useful tips for those who want to make these at home – pierce each éclair as it comes out of the oven to prevent them going soggy from the steam and then use the hole to insert the piping bag when you fill them; use vanilla bean paste rather than vanilla essence as it has a more intense flavour.

All was ready to taste with our cuppas, and we all enjoyed the “naughty but nice” tasty morsels.

Trish gave the vote of thanks and all agreed that we must do this again! No pressure, Liz!
